Eats Like He Means it
Corbin Evans has spent nearly 40 years in professional kitchens — as a chef, restaurant owner, instructor, and consultant — building a reputation for thoughtful, sustainable, locally-rooted food and hospitality.
A graduate of the Culinary Institute of America (with honors, and recipient of the Richard Keating Award) and Drexel University, Corbin has owned and operated acclaimed restaurants including LuLu's & LuLu's in the Garden and Oxford Canteen, led kitchens as Chef de Cuisine under Susan Spicer at New Orleans' Bayona Restaurant, and taught aspiring cooks through curriculum-driven programs at The Savvy Gourmet and The Restaurant School at Walnut Hills College.
Today, through Canteen Culinary Consulting, Corbin brings that decades-deep experience directly to restaurants, breweries, cafés, and hospitality venues — helping clients develop menus, build food and beverage programs, design kitchens, recruit and train staff, and manage food and labor costs. Recent projects include Velvet Ditch Coffee Roaster & Sitwells Cafe, Roundabout RV Resort and Waterpark, and Circle and Square Micro-Brewery, all in the Oxford, Mississippi area.
Corbin's work has been featured in Food & Wine, USA Today, The New York Times Magazine, and Bon Appétit, and he's been active in food-community leadership, including serving as President of the Crescent City Farmers Market and supporting Gulf Coast shrimpers through the White Boot Brigade after Hurricane Katrina.
Numbers are his game
Matt Kappers has significant experience in completing mergers and acquisitions and post-acquisition operations. He has managed acquisitions and divestitures internally for two multi-billion-dollar NYSE companies and has provided M&A advisory services to Concordia clients. In addition to his M&A background, he has held C-level leadership roles at several medium-sized companies. He is a former member of the board of directors for two publicly traded companies. His background provides him with a combination of transactional expertise and operational experience. Over his extensive M&A career, Matt has been directly involved in more than 150 transactions, showcasing his ability to navigate complex deal structures.
Matt earned a B.A. degree in Economics from Vanderbilt University and an M.B.A. degree from Miami University.

After spending time raising her amazing daughters, Amy Evans is now lucky enough to be doing what she loves - working with flowers and making arrangements that make people happy. She is inspired by learning and developing new designs and loves being a part of the flower community.
Amy has wonderful working relationships with local businesses and is always looking for inspiration and creative outlets wherever she goes.
